It is a anaerobic natural fermentation, meaning fresh picked beans are placed into stainless steel tanks and oxygen is removed. The motivation is the same as traditional applications: use yeasts and bacteria to convert acids and sugars in the coffee’s mucilage. However, by by virtue of control, the ability to modulate the organic processes is greatly increased and results in a dynamically fruit-forward profile in the cup.
